Crostini of Roast Beef

To make appx. 20 hors d’oeuvres you will need:
1lb beef tenderloin
2tbsp Irish Atlantic Sea Salt
2tbsp sesame seeds
Vegetable oil (to sear)
For the horseradish and chive sauce
4oz crème fraiche
1-2oz horseradish
1 bunch chives with chive blossoms
1 baguette (thinly sliced)
2-3tbsp extra virgin olive oil

(Meat preparation may be done a day in advance)
1.    Combine Irish Atlantic Sea Salt and black pepper with sesame seeds and press (or roll) onto beef tenderloin
2.    Sear tenderloin in hot vegetable oil in a sauté pan
3.    Brown on all sides then place in oven at 350 degrees Celsius for about 10 minutes (check with meat thermometer)
4.    Remove from oven and cool completely
1.    Slice baguette thinly (appx. 20 slices) and toast under grill on one side
2.    Brush lightly with extra virgin olive oil and season with Irish Atlantic Sea Salt
Horseradish and Chive Sauce
1.    Whisk together the crème fraiche and horseradish
2.    Add finely chopped chives
1.    Slice the tenderloin to fit nicely on a crostini
2.    Layer each crostini with horseradish and chive sauce and tenderloin piece
3.    Garnich each crostini with chive blossoms and some finely chopped chives
4.    Enjoy!
