Roasted Irish Potatoes

A staple in the Irish home and a regular for most families on a Sunday, roast potatoes are a delicious way to enjoy the Irish spud.


You will need:

2lbs of small Irish rooster potatoes (best variety for roasting)Roasted Irish Potatoes
1-2tbsp Irish Atlantic Sea Salt
3tbsp extra virgin olive oil
1tbsp chopped parsley (to serve)
Prepare:
1.    Wash and peal rooster potatoes
2.    Place potatoes in a large pot and cover with water, add Irish Atlantic Sea Salt
3.    Bring to boil and cook for 5-7 mins. 
4.    Drain the potatoes and leave to cool completely
5.    Scratch the potatoes lightly with a fork while cooling
Cook:
1.    Preheat oven to 250 degrees Celsius
2.    In a roasting tray, add the olive oil and heat in the oven for 2-3mins
3.    Carefully place the potatoes in the hot oil and baste the potatoes (toss in the heated olive oil)
4.    Add Irish Atlantic Sea Salt to the potatoes and place in the oven for 30minutes (turn regularly)
Serve:
1.    Place the roast potatoes in a heated serving dish and add chopped parsley
2.    Enjoy!
