Seafood Brushetta

You will need:
1 baguette
12 large shrimp (peeled, deveined and diced)
6 bay scallops (rinsed and quartered)
12 cherry tomatoes
1 bunch fresh basil
2 large shallots
3 cloves of garlic
½ cup extra virgin olive oil
2tbsp balsamic vinegar
Irish Atlantic Sea Salt (to taste)
Freshly ground pepper (to taste)

Prepare:

1.    In a medium pan over medium-high heat, add olive oil, crushed garlic (2 cloves) and seafood
2.    Stir occasionally and cook until shrimp are completely pink and scallops are opaque (about 3 to 5 minutes)
3.    Remove from heat, and let cool to room temperature
4.    Slice baguette and grill on both sides (try this on a BBQ to give extra flavour)
Brushetta:
1.    Rub each slice lightly with crushed garlic
2.    Slice tomatoes in half and toss with Irish Atlantic Sea Salt
3.    Finely slice shallots and add to tomato mixture
4.    Add the cooled seafood to the tomato mixture and toss with olive oil, balsamic vinegar and freshly ground black pepper
Serve:
1.    Place a portion of the seafood/tomato mix onto each slice of baguette
2.    Crumble a pinch of Irish Atlantic Sea Salt over each slice
3.    Enjoy!
